My perfect omelette

For getting rid of leftovers then an omelette is a great dish. There are lots of different varieties and they are really simple to do. There are however a few key secrets that you need to know in order for you to make your own perfect omelette.

Ingredients - Serves 1

  • 2 eggs
  • Spot of milk
  • Salt and Pepper
  • 2 mushrooms
  • Some chopped onion
  • Oil

Method

Pot a little bit of oil in the pan to heat and add some chopped onion. The onion will need to go transparent before you add the mushrooms, Cook these for a few minutes before you add the well beaten eggs, milk and seasoning. Give the omelette a stir, making sure that vegetables are evenly distributed around the omelette. Once the bottom of the omelette is nive and brown and the top nearly set, then you can pop the omelette under the grill to just finish off, or you can flip it. The top of the omelette only needs to be cooked for a few seconds before the omelette is done.

The three secrets of making your own perfect omelette

  1. Air - You need to beat your eggs so that your mixture has a nice froth. This leads to a nice light omelette
  2. Pan - The pan that you cook your omelette in is very important. It needs to be a good non stick pan, I have found that a 20cm pan with curved sides is a good size for a two egg omelette
  3. Salad - Serve your omelette with a nice side salad for a really great meal.

Please note - You can swap the mushrooms and onion for what ever you have in the fridge as a leftover. All of the following ingredients work well in an omelette

  • Cheese
  • Peppers
  • Ham
  • Chicken
  • Cooked Sausage
  • Onion
  • Herbs

Top Tip

A simpe way to flip an omelette is to place a plate over the omelette and then turn the pan over so that the omelette goes onto the plate. Now slide the omelette into the pan to cook for one or two minutes
